Educating Canadian Taste Buds
Maria Guadalupe Barrios de Abalos was born in the state of Hidalgo, Mexico, on the beautiful plateau of the Sierra Madre where, together with Veracruz, San Luis Potosi and Tamaulipas, it has survived centuries of cultural invasion. Since her immigration to Canada, 1972, Maria Abaloshas found her niche in the Hospitality Industry, gaining confidence over a 20-year period working for others by establishing Xilonen Catering and Consulting Services to meet the needs of fiesta lovers craving authentic Mexican foods. Founded with passion, Xilonen Catering affords Maria Abalos the opportunity to supply Canada’s fast growing Hospitality Industry seeking the best of zest in Mexican foods. Founder and first President of the Mexican Canadian Association, Maria is proud of her Mexican roots and, as a happy Canadian, knows that she is educating Canadian taste buds by introducing such new food products as pasilla, serrano, arbol, guajillo and smoked jalapeña. In this view, Maria Abalos stands in her food booth promoting Mexican sauces at Hostex 99, Mississauga’s International Trade Centre, as well as giving support to an important Mexican Import Company.
