Jelly or Tea Cake

Three cups white sugar, 3 eggs, 1 cup butter, 1 cup milk, 1 teaspoonful of soda, 4 cups flour sifted. Beat up well, and bake in shallow tins. Flavour to taste.

Cake -stir the butter 1/2 lb till it comes to a cream, then put in eggs 4 / well beaten with the 1/2 pint milk - then peel (\ lb mixed) currants + sultanas (1 lb of each) _ a lb Flour - then scatter 2 teaspoonfuls of baking powder (Pearse & Duffs) + a teaspoonful of mixed spice -

Charles Cake

2 cups Sugar 5 eggs butter the "size" of 2 eggs 1 small cup milk 1 /14 teaspoonful baking powder a little nutmeg or lemon

Mix butter & sugar to a cream add eggs one by one put in one cup flour, then the milk add the other cup of flour with the baking powder. Fry in a small tin if it falls after being cooked add a little more flour. Bake from 20 to 30 minutes.

"Sponge Cake"

1 lb of flour

1 1/4 " " sugar

1 doz. eggs

Beat the yolks first, then add the sugar, then the whites flavored with essence of lemon or rose, Beat it well then stir in the flour without beating, Lastly add a Wine Glass and a half of cold water -Put in the pan & bake immediately when done turn it out of the pan and stand it up till quite cool -

Drop Cakes

1 egg (well beaten) 1. tablespoonful of butter & enough milk to moisten it 1. pint of flour 2. heaped teaspoonfuls of baking powder 2. tablespoonfuls of sugar.

Beat the egg & put into it the melted butter & (about 3 tablespoon) skim milk - pour this into the flour & sugar. Mix quickly together & make into little cakes. Bake in a (floured) pan for about ten minutes.

Sponge Cake

1 cup Flour
1 " sifted Sugar
1 teaspoonful cream of Tartar

Mix these well together & pass through hair sieve - then add gradually to 3 Eggs well beaten - when nearly all the Flour is absorbed, add 1/2 cup of milk or thin cream in which 1/2 a teaspoonful of carbonate of soda has been dissolved - flavour with a little Essence - & pour into the tin not too deep - & bake in rather quick oven. taking care there is more heat at the bottom of the oven than at the top.
