Form 10: Critical Control Point(s)

Each CCP shall be documented in form 10 or equivalent and shall include the following information:

• Hazard(s) to be controlled at the CCP and description of control measure(s);
• Critical limit(s);
• Monitoring procedure(s);
• Deviation procedures;
• Verification procedure(s);
• Record keeping.
