Fish Processing
Description: The roasting tongs or BBQ sticks holding the salmon are
positioned upright next to the fire. The flesh or meaty part of the salmon is placed facing the fire
to cook. Once that side is cooked to the desired taste the salmon is rotated so that the skin faces
the fire.
